Via Rosa expands kitchen, not dining space

It’s true, Bainbridge’s favorite pasta shop is expanding — but a sit-down restaurant it is not becoming.

Don’t expect Via Rosa 11 to grow a host of servers and fine linens this winter.

It’s true, Bainbridge’s favorite pasta shop in Rolling Bay is expanding — but a sit-down restaurant it is not becoming.

“Most of it is going to be a kitchen,” manager Tatiana Sordello said of the space formerly occupied by Que Sarah Boutique, which Via Rosa took over last month.

“It will basically be what we are now, just doubled in size,” Sordello said. “There’s a big rumor going around that we’re becoming a restaurant — that is not the case.”

Sordello explained that the counter service/takeaway operation is in desperate need of additional kitchen space. There’s not enough room for adequate equipment.

“We always joke that we are performing miracles,” Sordello said. “Everything we do is on two burners and a small oven. [And] we don’t have a walk-in cooler or freezer, so we’re very creative with how we use the space.”

The expansion, scheduled to be completed by the end of the year, will allow Via Rosa to add more deli cases, and Sordello expects that they will also be able to add new menu items, too.

But what those items will be remains to be seen.

“We have a lot of requests for certain things to be made and we always take into consideration what our customers are asking for,” Sordello said.

Sordello confirmed that her father, Pino, the shop’s owner, is happy with the casual feel of the counter service/takeaway option, and she doesn’t expect that format to change anytime soon.

“We love the open kitchen where our customers can see everything being made,” she added.

At present, the Rolling Bay fixture prepares eight sauces — vodka, marinara, basil pesto, puttanesca, porcini wild mushroom, bolognese, gorgonzola and brown butter with sage (available on request) — and five pastas on rotation — usually a mix of two short and three long, such as pappardelle or fettuccine, sometimes with special flavors like wild mushroom or roasted beet.

Via Rosa 11 also offers lasagne (meat, vegetarian or pesto), desserts and a variety of antipasti. Their eggplant parmigiana is a popular gluten-free option, as are many of their soups and sauces.

Via Rosa 11, located at 10320 NE Valley Road, is open from 10 a.m. to 7 p.m. Monday through Saturday.

Many of its pastas and sauces are also available at Pane D’Amore, 4569 Lynwood Center Road NE, which is open seven days a week, including 8 a.m. to 4 p.m. Sunday.
