Verjus serves 10-course organic tasting menu on Nov. 14

It’s a vegetable party. Chef Brendan McGill and Hitchcock sous chef Jeremy Arnold are excited to serve a 10-course organic vegetable tasting menu at Verjus on Monday, Nov. 14. The avant garde-leaning meal will be paired with biodynamic wines from Owen Kotler, a local importer of unique natural wines from around the world.

The founder of drinkOKwines, Kotler sources wines from producers that make wine without chemicals, additives or laboratory yeasts. He believes that grapes should be grown in as natural a way as the climate and soil allow, leading to lovely, expressive wines that uniquely reflect where they come from. Along with their alcohol, guests can look forward to dishes like celeriac with fermented cabbage, malted barley and raw apple cider; fingerling potatoes with dill pollen, cultured whey and fresh horseradish; poached rutabaga with fermented turmeric; honey-fermented beets with smoked sweet peppers and parsley broth; and matsutake with chocolate and hay ice cream.

There will be two seatings, one at 5:30 and another at 8 p.m., both for a maximum of 20 guests. The intimate, airy restaurant is the perfect place to celebrate the supermoon, the biggest in 70 years, which will light up the sky on this special evening.
